[24/05/2010] General info about Ice cream maker

The domestic ice cream maker mixes cream, milk, sugar and flavoring in order to make ice cream. The mixture is stirred by paddle, which is also called dasher, which paddle is powered by a motor or is turned by hand. Most models have two canisters – inner canister, which holds the mixture and an outer canister, known as freezer bowl. The inner canister has a paddle that stirs the ice cream mixture constantly – this ensures that the mixture is well aerated while it freezes and also prevents the formation of ice crystals. The outer canister contains freezing agent, traditionally ice and rock salt, although there are types of ice cream makers that use antifreeze and the outer canisters has to be put in the freezer overnight before making the ice cream. And the most expensive models have an electric cooling system with a compressor, so they don’t have to be kept in the freezer or filled with rock salt and ice.

The ice cream makers are either hand-cranked or have a motor, which motor rotates the paddle and mixes the ice cream.  The simplest models cost from $30, while the more expensive, domestic ice cream makers can cost up to a few thousand dollars.
